Weishan is remote Hunan Province in China. They have an ancient tradition of growing and making fine green teas. The company that we buy from also makes a famous yellow tea: Junshan Yinzhen. So they took those traditions and applied them in Weishan. Yellow tea production has been guarded for centuries, and only partially understood. However when the tea has been harvested, the tea is partially fixed green, and then it is piled up and covered. It slowly goes a lighter yellow shade and the tea takes on a more complex, slightly fruity flavor.
